Thanksgiving Siesta Key Day 3

Thursday-Thanksgiving. We all have a lot to be thankful for. We have a great place to hang out, friends and family and great food.

Thursday morning was pretty laid back. Several of us ran or walked. People were still working on the puzzle (I don't think Rodolfo left it all day). Eventually mom, Ana Lia and I took off and went Geocaching. We searched for 4, but only came up with 2. We all had a good time though. A group went out on the boat and got shrimp to fish with. By midday cooking was underway. There were between 17-20 people at the house for Thanksgiving lunch. Later that evening Kev and Nicole went to Nicole's family to dinner, so mom, Ana Lia and I took the kids up to the marina to a park and let them run around. Once everyone went to bed Rodolfo and I finished up the puzzle.

Thanksgiving Siesta Key Days 1 and 2

Tuesday November 25 we drove over to Siesta Key to Uncle Kevin's to begin Thanksgiving. We were the first of our family to arrive for the festivities. The nice thing about being in Siesta the night before is that you wake up there and can play. John and I both took runs, the kids played with Bailey (the dog) in the backyard and Kev and Nicole had to work. My mom and dad arrived around noon and we all including Bailey walked up to the Salty Dog in the village for lunch. Ana Lia and family showed up for a late dinner.

Key lime pie

John and the kids pulled more lime off the tree again today. I planned on making 2 key lime pies. Clay's friend came down and while I made a pumpkin coconut pie for Thanksgiving the 2 boys made the key lime pies.

They had more fun using the moose egg separator.

When the pies were done Clay's friend took the one he made home and the one Clay made we gave to a friend for Thanksgiving.

if 8 is great, 38 must be awesome

Well I turned 38 today.  It was not much of an exciting day, I went to a PTA meeting downtown and got the oil changed in John's car.

My family did take me out to dinner at Sticky Finger (I had a coupon for free ribs).  John gave me a gift certificate to a bookstore, Clay a necklace, Sage a digital picture key chain, Becky board games, and mom and dad a new router for the computer.  All of which were greatly appreciated.

I made my own birthday "cake", it was a tart from a recipe I saw in a Martha Stewart magazine.
It tastes better then pecan pie, it has a more honey flavor.  It was really yummy!!!!

(I could not find either of the honeys it talks about, I bought for the acacia a local clover honey and for the leatherwood a raw thick type honey)

Honey and Pine Nut Tart
Honey and Pine Nut Tart

Makes one 10-inch fluted tart
FOR THE PASTA FROLLA
1/4 cup heavy cream
1 large egg
1 large egg yolk
1/2 teaspoon pure vanilla extract
2 1/3 cups all-purpose flour, plus more for surface
1/2 cup sugar
1 teaspoon coarse salt
1/2 teaspoon baking powder
5 ounces (1 1/4 sticks) cold unsalted butter, cut into small pieces
FOR THE FILLING
1/2 cup sugar
1/3 cup acacia honey
1/4 cup Tasmanian leatherwood honey
1 teaspoon coarse salt
6 ounces (1 1/2 sticks) unsalted butter, cut into small pieces
1/2 cup heavy cream
1 large egg
1 large egg yolk
1 1/2 cups pine nuts (6 ounces)

1. Make the pasta frolla: Whisk cream, egg, yolk, and vanilla in a medium bowl. Pulse flour, sugar, salt, and baking powder in a food processor to mix. Add butter, and pulse until mixture resembles coarse meal. With the machine running, add cream mixture, and process until dough just comes together. Shape dough into 2 disks, and wrap each in plastic. Refrigerate 1 disk until firm, about 1 hour; reserve remaining disk for another use. (Dough can be refrigerated for up to 2 days or frozen for up to 3 months; thaw before using.)

2. Preheat oven to 325 degrees. On a lightly floured surface with a lightly floured rolling pin, roll dough to 1/8-inch thickness. (If dough is soft and sticky, transfer to a baking sheet and freeze until firm but pliable, about 5 minutes.) Cut out a 12-inch round, and fit it into a fluted 10-inch tart pan with a removable bottom. (Patch any tears with scraps of dough.) Freeze while making the filling (or cover and freeze for up to 3 days).

3. Make the filling: Bring sugar, honeys, and salt to a boil in a medium saucepan, whisking until sugar dissolves. Add butter, and whisk until incorporated. Transfer honey mixture to a medium bowl, and let cool for 30 minutes. Whisk in cream, egg, and yolk until incorporated.

4. Place tart pan on a rimmed baking sheet. Scatter pine nuts over bottom. Slowly pour filling over pine nuts, redistributing pine nuts evenly with your fingers. Bake until crust is golden brown and center is set but still slightly wobbly, about 1 hour. Transfer tart to a wire rack, and let cool completely. Remove from pan, and serve immediately.

Tea for 16

Sage decided she wanted a tea party for her birthday. We invited 7 girls and their moms to come celebrate with us, as well as both of Sage's grandmas.

We ate triangle shaped sandwiches, scones, cheese, and cookies. And offered tea and hot chocolate.

The girls got to decorate hats. My mom found white tea cups and everyone (mom and daughters) decorated the cup with special pens that once baked the ink does not come off even when washed. We voted who decorated the best cups for the children and adults and prizes were given.
